Is it possible to make direct connection to Volumio (PI3B) with a smartphone without a router or home network?

Volumio creates a hotspot WiFi on which you can connect to. It is designed to help configuration. But you can use it to control volumio. You have to connect your smartphone to it.

Hello! I have experienced problems with AirPlay when my iPhone is connected to the “stand alone” Volumio hotspot. Volumio doesn’t compare in the list of available AirPlay speakers. Is that normal? Maybe AirPlay need a “infrastructure” Wi-Fi network to work?
