What do the different options do? What are they for? Currently I have Digital selected.

Values available in mixer setting are returned by alsa and depend of your dac / soundcard. In your case, only “digital” is used to set the volume. Other controls may have no effect or mute/unmute or boost output signal. But it won’t change sound quality… Just use the default proposed.
