principally yes, this will work on all devices.
However, there are a number of newer NUCs which have difficulties with the released X86 version (it has an old kernel and corresponding firmware).
In your case, you may have to use our beta version as announced in Volumio Development/ Development talks/ Volumio X86/ Debian Buster debugging party .
