I want to implement a clean shutdown option and wonder if it´s possible to add a kind of overlay plugin to the display, so there is no need to go to settings or a hardware handicraft.

I don’t think that there is the ability to modify the display, that will still allow Volumio updates.
I´m not a programmer, but I can not believe it´s difficult to add a software button to “sudo shutdown.”
I didn’t say that it couldn’t be done. 
However, you can not modify the UI, AND still have access to OTA updates of Volumio.
May be an item for a wish list?
