is it possible to add support for displaying coverart and metadata on a display over HDMI? basicly a on screen display without using a browser?

Nope sorry… Volumio is meant to be use headless…
If you install a window manager and a browser it’s possible to boot into the volumio Web interface. Cover art would be another question though.
Have a search for Raspberry Pi kiosk and that should point you in the right direction for this sort of thing.
